4Sisters Rice Bowl
Ingredients:
1 cup long grain organic white rice, cooked according to package directions
1 (14 ½ oz.) can petit diced tomatoes, reserve juice
2 tablespoons olive oil
6 medium cloves garlic, finely chopped (about 6 teaspoons)
1 medium fresh jalapeno, cored and finely chopped (remove ribs & seeds for less spicy, prior to chopping)
1 (15-oz.) can black beans, drained & rinsed
2 teaspoons sea salt
2 teaspoons ground cumin
1 teaspoon chili powder
¼ cup finely chopped fresh oregano leaves with stems
1/8 cup finely chopped fresh cilantro
Directions:
While the rice cooks, drain the can of tomatoes into a liquid measuring cup. Add enough water to the tomato juice to equal 1 cup of liquid.
Heat olive oil in a 10-12-inch skillet. Add the garlic and jalapeno until the garlic is browned and the jalapeno smells pungent, about 1 minute.
Add the drained black beans, salt, cumin & chili powder. Stir well to mix. Add the tomato juice & water mixture and bring to a boil. Reduce heat to a gentle boil, cook, stirring occasionally until the beans absorb much of the liquid, about 5-7 minutes.
Add the diced tomatoes, oregano, cilantro and cooked rice. Stir over low heat until warm.
Serve immediately with your favorite other rice bowl toppings such as:
Fresh avocado
Grilled or cooked chicken or Grilled or boiled peeled shrimp
Fresh squeezed lime juice
*** Brown rice can be used instead of white rice for a whole grain dish, increase cook time to 40 minutes, or according to package directions.
