Throughout the year, owners Michael and John Fallone travel to their father Mario’s Italian birthplace in search of the best food and wines to bring back to Cantoro, items found nowhere else in the U.S. It’s no wonder that the eatery is consistently named one of the best markets and trattoria in the U.S.
Cantoro Italian Market’s Deviled Eggs with Candied Bacon
Ingredients
· 24 eggs hard boiled, cut in half with empty yolk into mixing bowl
· 2 tablespoons of Dijon mustard
· 1 cup of mayonnaise
· 2 teaspoons of salt
· 1 teaspoon of black pepper
· 3-4 dashes of Cholula brand hot sauce (you can use any but Chef Anthony enjoys this brand for the eggs)
· Half of a lemon for lemon juice
Using KitchenAide mixer with paddle attachment, mix yolks until smooth. Add mayo and mix until it is smooth, then add and mix other ingredients. Using pastry bag fitted with a star tip pipe, yolk filling back into the whites.
While making the deviled eggs, pick your favorite bacon and place it on a sheet pan, sprinkling very generously with brown sugar. Then bake till golden brown. When the bacon cools down, chop into thin pieces.
Sprinkle the tops of the eggs with a light sprinkle of paprika, then garnish the tops with bacon.
