Teen offers healthy take on a vegetarian BBQ sandwich where she substitutes Jack Fruit for pulled pork. The recipe is posted below.
Vegetarian Pulled Pork
20 oz. can of jackfruit in brine
1/2 cup of bbq sauce
1/2 onion
BBQ Seasoning:
Tsp smoked paprika
1/2 tsp chili powder
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Tbsp brown sugar
Mix all of the seasoning ingredients and set aside.
First drain and chop your jackfruit
Sauté half of an onion
When translucent you can add your bbq seasoning and chopped jackfruit
Add a tablespoon of water and cook on medium heat for 5 minutes
Then add in a half cup of bbq sauce with the other tablespoon of water and simmer for 15 minutes
Grill your bun and assemble with jackfruit, coleslaw and grilled pineapple.
