Slow Cooker Lamb and Green Beans
Ingredients
· 1 onion, diced
· Bone in leg of lamb
· 2-4 Tablespoons of allspice
· Salt and pepper to taste
· 2 cups tomato sauce
· 2 cups beef broth, low sodium
· ~1 pound of green beans, cleaned and trimmed
Instructions
1. Place diced onions in slow cooker.
2. Cover leg of lamb in allspice and place in slow cooker.
3. Pour tomato sauce, beef broth and salt/pepper in slow cooker.
4. Cook on low for 8 hours total. 1 hour before it is done, put green beans in the slow cooker.
Tex-Mex Egg Salad
Ingredients
· 1 jalapeno, de-seeded and finely diced (adjustable based on spice preference)
· 1 green onion, finely chopped
· 1 tsp. cilantro, finely chopped
· ¼ tsp. cumin
· 1 Tbsp. low-fat mayonnaise
· 2 Tbsp. yellow mustard
· 1 tsp. lemon juice
· 6 hard-boiled eggs, peeled and chopped
· Salt and pepper to taste
Instructions
· Stir all ingredients except for eggs in a bowl.
· Stir in eggs. Salt and pepper to taste.
· Serve as a dip with tortilla chips, in a pita, on bread or alone.
