Boxty Pancake Recipe
2lb Shredded Potatoes
1qt Milk
4 Eggs
2lb Gold & Crispy Fry Mix
1 tbsp Butter
1 tbsp Dried Parsley
Salt & Pepper to taste
5oz Cooked Corned Beef
3oz Cooked Cabbage
1 tbsp Butter
1 oz White Wine
- Combine first 7 ingredients in a mixing bowl
- Mix until all ingredients are well mixed together
- In a frying pan add olive oil and 4oz of boxty mix
- Cook until you pancake consistency
- In a separate frying pan add 1tbsp butter (let melt)
- Add Corned Beef and Cabbage
- Deglaze with White Wine
- Add contents in to the cooked boxty shell
- Top with horsey sauce
