Diamonds Steak and seafood Shrimp Ceviche
Yield: 4 cups
1 pound Poached Shrimp (small diced)
1 cup Cucumber (seeded and small diced)
¾ cup Tomato (small diced)
½ cup Red Onion (small diced)
¼ cup Jalapeno (minced)
¼ cup Fresh Cilantro (chopped)
2 each Avocado (small dice)
1/3 cup Fresh Lime Juice
¼ cup Kosher Salt
2 tsp Black Pepper (fresh ground)
1. Combine all ingredients in a mixing bowl. Add additional lime juice, salt and pepper to your desired taste.
2. Serve with your favorite cracker or vegetables (I suggest pita chips/tortilla chips/cucumber slices)
***Best to make this just before enjoying***
Diamonds Steak and Seafood Poached Shrimp
Yield: 1 pound
1 pound Raw Shrimp (which ever size you like best)
3 quart Water
½ cup White Wine
½ cup Kosher Salt
1 each Lemon (cut in half)
1 each Bay Leaf
2 ea Fresh Garlic Clove
2 sprigs Fresh Thyme
1. Bring all ingredients to a boil except the shrimp.
2. Once the liquid is boiling add the shrimp and return to a light boil. Immediately strain the shrimp out of the liquid and transfer into a boil with 3 cups of ice and 3 cups of cold water.
3. Serve chilled
***Poached shrimp can be served as shrimp cocktail as well***
